First Meeting!

Welcome to the Lancaster County Cookbook Club!  We are a group of ladies who love cooking and baking and sharing our creations with others.  Each month, we make food based on a theme, cookbook, type of food, etc. and gather to share and enjoy.  This month was our first meeting and we each made a favorite recipe to share.  We had some pretty incredible food to sample and we all left very full and satisfied!

On the Menu:
Hummus
Peanut Soup
Portobello Burgers on Herb Oatmeal Potato Buns
Chicken Supremes With Tapenade and Mushroom Sauce
Beef Burritos
Carrot Cake
Death By Chocolate
Sopapilla Cheesecake

For appetizers, we started with both an original hummus and a roasted red pepper hummus.  In the center is a corn salsa that was delicious.  And what better than homemade baked tortilla chips and veggies?


Followed up with Peanut Soup.  This soup was so good, and sounds so easy to make and share:

For the main dishes, we had Portobello Burgers on Herb Oatmeal Buns (homemade, by the way!).  These are an awesome alternative to traditional burgers, even kids would love these!

Then we went French with Chicken Supremes with Tapenade and Mushroom Sauce.  This tasted every bit as rich as it sounds! 

And, of course, some tasty Mexican food is always a must.  These beef burritos were so cheesy and spiced perfectly!

When the main dishes were consumed, we moved on to dessert (although there wasn't a whole lot of space left for dessert, we all managed to get some bites down!).  To start, we had a super moist carrot cake that was supposedly made a little healthier, although it tasted heavenly.

We moved on to a crockpot Death by Chocolate cake, that definitely satisfied a chocolate craving! (I apologize for the pic, not sure what happened here!)

And then we finished with a Sopapilla Cheesecake.  Sliced almonds, sugar, butter and cream cheese-can't go wrong!

All in all, not a shabby way to start a new cookbook club.  We can't wait to show you what we come up with next month!
